Is in OK to use "can" instead of "could"?
Can you help me? or Could you help me? I know "could" is more polite than "can" but do I have to always use "could"? Undecided

"Could" is the correct way to ask questions. "Can" is also used to ask questions but on a more friendly way.

Could, subjunctive word of can, is used to express possibility, things that may not or may happen, may or may not be done/completed. To ask polite questions or in the past tense.
Quote:We could go (if we like / but we won't / etc.), but
We can go (= We are capable of going / It is possible for us to go)

You use could if you are not sure about something and can if your are positive about it!
